Sunday pots that still taste like dinner

  • Lentil coconut curry. Sweat 1 onion, 3 garlic cloves, 15 g ginger. Add 2 tbsp curry paste, 250 g red lentils, 400 ml coconut milk, 400 ml water. Simmer 22 minutes. Salt at the end; lentils tighten as they cool.
  • Beef and barley stew. Brown 800 g stewing beef. Add 150 g pearl barley, 2 carrots, 1 tin tomatoes, 800 ml stock. Lid on, 160C oven for 2 hours. Cool in a wide tray, not the deep casserole.
  • Black bean burrito filling. Fry 1 onion and 2 tsp cumin, add 2 tins black beans, 150 ml salsa, 80 ml water. Mash half. Makes about 900 g. Assemble wraps the morning you eat them or the tortilla steams.

Costs move by shop and season, so treat "about $2.50 a bowl" as indicative. The cheaper habit is cooking the pot from what is already on offer, which is the same discipline as meal prep on a budget.

Box meals that do not dry out

Dry chicken is the default Pinterest prep failure. The fix is a marinade with salt and acid, a real internal temperature, and sauce packed on the side.

  • Chicken shawarma boxes. Toss 600 g thigh with 20 g yoghurt, 15 ml lemon, 2 tsp cumin, 1 tsp paprika, 8 g salt. Roast 200C for 22 minutes to 74C in the thickest piece. Box with 180 g rice and cucumber. Garlic sauce in a 30 ml pot.
  • Tofu teriyaki quinoa. Press 560 g tofu, cube, roast 200C for 20 minutes. Sauce is 40 ml soy, 20 ml mirin, 15 g sugar, 5 g grated ginger, simmered 3 minutes. 180 g quinoa per box. Sauce on the side until you reheat.
  • Farro roast-veg bowls. Simmer 240 g dry farro 25 minutes (about 720 g cooked). Roast 500 g mixed veg at 200C for 30 minutes with 20 ml oil. Dressing is 30 ml tahini, 15 ml lemon, 20 ml water, 1 per box in a pot.
  • Salmon quinoa packs. Bake 4 fillets (120 g each) at 190C for 12 minutes. Chill fast. Eat by day 3, not day 4. Dill yoghurt on the side.
  • Greek chicken bowls. Same roast as shawarma with oregano and lemon only. Box with 150 g cooked farro, tomato, and 40 g feta added the morning you eat.

Breakfast and snack prep that is not dessert

Pinterest breakfast prep leans sweet and under-protein. These four hold their texture and do not need a 6am blender.

  • Egg muffin tray. Whisk 8 eggs with 60 ml milk, 80 g chopped pepper, 60 g spinach, 4 g salt. Divide across 12 greased cups. Bake 180C for 18 minutes. Two muffins are breakfast.
  • Overnight chia jars. 30 g chia, 200 ml milk, 10 g maple, rest 4 hours. Top with fruit in the morning so it does not weep into the seeds.
  • Shredded pork for sliders. 1 kg pork shoulder, 200C for 20 minutes then 150C for 3 hours with 150 ml stock, lid on. Shred, cool, fridge 4 days. Sauce when you assemble.
  • Chickpea pasta salad. 300 g dry chickpea pasta, boiled 8 minutes, tossed with 200 g cherry tomato, 80 g olives, 40 ml vinaigrette kept separate until Monday.
