How to scale recipe servings without ruining the ratios

Multiply every line by 2 and you get an over-salted, under-risen version of the dish. Here is which ingredients scale linearly, which do not, and what to do about the pan.

A recipe for 4 does not become a recipe for 8 by multiplying every line by 2. Do that and the salt lands hard, the chilli takes over, the cake sinks and the tray takes 20 minutes longer than you allowed.

Scaling is arithmetic for about 80 percent of the ingredient list and judgement for the rest. This guide names which lines are which, and gives you numbers rather than a warning to taste as you go.

What does scaling a recipe mean?

Scaling a recipe means multiplying its ingredient quantities by a factor equal to your target servings divided by the original servings, then adjusting the ingredients and equipment that do not respond proportionally. A recipe for 4 scaled to 6 has a factor of 1.5.

The second half of that definition is the part people skip. Volume scales cleanly; perception of salt, gas produced by leavening, evaporation from a pan surface and heat transfer through a thicker mass do not.

Which ingredients scale linearly?

Anything that provides bulk scales linearly, and anything that provides intensity or structure does not. That single distinction covers most of the decisions.

Percentages are starting points for a 2x scale. Taste and adjust upward, never downward.

The asymmetry is the practical point. Under-seasoning is a 30-second fix at the end, over-seasoning means diluting the whole batch, so every uncertain line should be scaled low.

Where does linear scaling break?

It breaks in 4 predictable places, and 3 of them have nothing to do with the ingredients at all. Knowing which one you are hitting tells you what to change.

Salt and perceived intensity

Perception of saltiness and heat does not track quantity in a straight line. Doubling salt in a doubled dish tends to taste saltier than the original, which is why 75 percent is the working starting point.

Leavening and rise

Leavening produces gas that the batter structure has to hold. A useful ceiling is roughly 1 to 1¼ teaspoons of baking powder per 120 g of flour, and exceeding it gives you a fast rise followed by a collapse.

Pan surface and evaporation

A sauce reduces through the exposed surface, not through its volume. Doubling a sauce in the same pan doubles the depth but leaves the surface unchanged, so it reduces far more slowly than the recipe says.

Crowding and browning

Doubling the contents of a frying pan stops it browning, because the released moisture cannot escape fast enough and the food steams. Cook in 2 batches or move to a larger pan; there is no ingredient adjustment that fixes this.

How do you match the pan to the new quantity?

Match by surface area, not by the name on the tin. Pan sizes sound close and differ by a lot, which is why a scaled cake overflows or bakes into a thin disc.

Area for a round tin is π times the radius squared. Assumes the same tin depth throughout.

Doubling a recipe baked in a 20 cm round does not mean a 23 cm round, which holds only about 1.3 times as much. Two 20 cm tins, or one 23 x 33 cm tray, are the honest options.

How does cook time change?

Cook time scales with thickness, not with quantity. Twice the food spread at the same depth takes roughly the same time; twice the food in the same dish takes considerably longer.

  • Same depth, bigger footprint: start checking at the original time and expect 5 extra minutes at most.
  • Same pan, deeper contents: add roughly 25 to 50 percent, and check the centre rather than the edges.
  • Roasts and whole joints: go by internal temperature, since a joint twice the weight is not twice as thick.
  • Simmered sauces: expect longer reduction in a narrow pan, or move to a wider one and keep the original time.
  • Ovens: more cold mass drops the oven temperature, so preheat properly and avoid opening the door early.

Can you scale a baking recipe?

You can scale baking, but the tolerance is much narrower and the feedback comes too late to fix. Bread, cakes and pastry are chemistry with a fixed ratio between flour, liquid, fat, egg and leavening.
